The food sources of FA include leafy green vegetables and citrus fruits with a bioavailability of 70%. Fatigue and stress are two main factors affecting the quality of life. University students are prone to have unhealthy dietary habits which impact their quality of life. The dietary practices can become permanent dietary habits that can affect health in older ages. Therefore, it is required to assess the relationship of dietary preferences of people with different psycho-physical attributes. In this regard, the current study aimed to recognize university students’ ongoing food attitudes for understanding the impact of dietary habits on health and to investigate the association of food consumption trends with fatigue and stress. This study was a descriptive cross-sectional study.Item PHYSIOCHEMICAL AND MICROBIAL ASSESSMENT OF LOOSE ICE SELLING BY DIFFERENT STREET VENDORS IN LAHORE(UMT.Lahore, 2023) SHAHZEBThe water used for formulating ice should be of drinkable quality because the ice is used in large amounts as a refreshment in various types of beverages, particularly in the spring and summer seasons, and is the basic material in the processing of ice slush. Ice is also used to keep foods cool, such as compote, chopped fruits, and fruit salads. Pakistan's annual dairy production is estimated to be around 33 billion liters, ranking it fourth among the world's milk-producing countries.Item FORMULATION OF ACTIVE PACKAGING SYSTEM USING CLOVE OIL MICROEMULSIONS FOR ENHANCING THE SHELF LIFE OF FRESH FRUITS(UMT.Lahore, 2023) GHULAM FIZZAThe purpose of food packaging is undergoing significant transformations to meet the evolving demands of the market. Factors such as food safety, consumer preference for healthier options, the need for high-quality products, extended shelf life, convenience, transparent packaging, and sustainable materials have led to the emergence of innovative packaging technologies, including active packaging. This study focused on the development of an active packaging system using chitosan, known for its effective barrier properties against moisture and gas permeation. Firstly, stable microemulsions containing clove oil were formulated, with an average particle size of 142.2±2 µm, and characterized for thermal stability and pH changes. Secondly, these microemulsions were incorporated into chitosan matrices to create the chitosan-based active packaging system. Using by-products from the food industry and investigating substitute sources are becoming progressively significant in fulfilling the consumers' demand for animal based protein. This study aimed to investigate the nutritional value of mutton and fish liver and their future application as a source of high-added-value proteins for supplement formulation. The proximate analysis (moisture, ash, protein, and fat), color, peroxide value (POV), free fatty acid analysis (FFA), 2,2-diphenyl-1-picryl hydrazyl-hydrate (DPPH) assay, total phenolic composition (TPC), 2,2′-azino-bis(3- ethylbenzothiazoline-6-sulfonic acid) ABTS, and Ferric Reducing Antioxidant Power (FRAP) assays were performed to evaluate the nutritional value and shelf stability of mutton and fish liver at different days (0, 1, 3, 5 and 7). The protein was also evaluated at different hours (0, 2, 4, 6, and 8) with a storage temperature of 4 oC. The optimized proximate and kinetics were later used to formulate chicken nuggets with different percentages.Item FORMULATION AND CHARACTERIZATION OF LEMONGRASS-OIL BASED EMULSIFIED EDIBLE COATING FOR ENHANCING THE MICROBIAL SAFETY OF CHICKEN MEAT(UMT.Lahore, 2023-08-01) UMAIR AHMADThere has been an increase of the trend of using edible coatings to avoid food wastage and to increase the shelf life of perishable food products. The present study was conducted with the aim to analyze the effects of lemongrass oil incorporated in Carboxy Methyl Cellulose (CMC) based edible coatings on the physiochemical properties, microbial safety and oxidative stability of raw chicken. The characterization of lemongrass oil, emulsions and coatings was performed through DPPH and Folin Ciocalteu assay. After the chemical analysis, T1 (chicken meat + E.coli O157:H7+2% lemongrass oil incorporated in CMC based edible coating) was compared with positive (chicken meat) and negative control (chicken meat + E.coli O157:H7) on the basis of antimicrobial activity and quality assessment over a period of seven days stored at 4℃. CMC based edible coating significantly (p<0.05) reduced the microbial load of T1 (chicken meat + E.coli O157:H7 + 2% lemongrass oil incorporated in CMC based edible coating) as compared to positive and negative control.
