dc.description.abstractGranola bar, is considered to be the healthy snack choice, as a nutritious food product can be consumed in daily diet, considered as a rich energy source. As cereals are known to be mostly high in carbohydrates but can also be fortified with other vital micronutrients. In the following research granola bars made from oats have been fortified with iron incorporated in an emulsion based system, which is a required essential micronutrient in human body involved in various critical functions such as transport of oxygen and other physiological functions. As a healthy food choice granola bars could also be the source of many essential nutrients as the research is mainly focused on iron which is also highly prone to oxidation is incorporated in the granola bars using emulsion technology to ensure its safe delivery and retention in the product after cooking processes. A water-in-oil emulsion was used to encapsulate iron in the dispersed phase, with oil as the continuous phase, and then incorporated in the granola bars as a replacement of oil.
